Xanthan gum (CAS No. 11138-66-2) is a pale yellow powder with the molecular formula (C₃₅H₅₈O₂₉)ₙ. It is a water-soluble high-molecular-weight polysaccharide produced by microbial fermentation, possessing excellent thickening, stabilizing, emulsifying, and acid-alkali-salt resistance properties. It is easily soluble in water but insoluble in organic solvents, and is widely used in food, pharmaceuticals, daily chemicals, and petroleum industries. It is a multi-functional food additive and industrial auxiliary.

Uses and Applications
- Food industry: Used as a thickener, stabilizer, and emulsifier in beverages, sauces, baked goods, meat products, dairy products, etc., to improve food texture and mouthfeel and prevent separation and sedimentation. Usage must comply with national standard limits.
- Pharmaceutical industry: Used as a pharmaceutical excipient in oral solutions, suspensions, gels, and other formulations to adjust the viscosity of the liquid, improve drug stability and bioavailability; it can also be used as a moisturizing ingredient in wound dressings.
- Daily chemical industry: Used in skincare products, shampoos, shower gels, toothpaste, and other products to provide thickening, foam stabilization, and moisturizing effects, improving the product's texture and feel.
- Other fields: Used as a thickening and stabilizing agent in drilling fluids during oil extraction to improve drilling efficiency; used in pesticide formulations to enhance the adhesion and stability of the liquid; and can also be used as a thickening additive in water-based coatings.
