What Is Xanthan Gum (E415)?
Xanthan gum (E415) is a fermented polysaccharide used in food and industry for its outstanding thickening, stabilizing and suspending performance. It is also known as xanthan gum powder, E415 or CAS 11138-66-2. It dissolves readily in water to form a highly viscous, pseudoplastic solution that stays stable across a wide range of temperatures, pH levels and salt concentrations.
