Process Flow Description

 

In the ingredient mixing tank, the starch slurry is adjusted to 17°Bé, and its pH is regulated to 5.0–7.0 using Na₂CO₃. Then, 0.15% calcium chloride is added as a protective agent and activator for the starch enzyme. Finally, thermostable α-amylase is introduced, and the mixture is stirred evenly. The slurry is then pumped into a jet liquefier, where it comes into direct contact with steam. The temperature of the discharged material is controlled between 100–110°C. After leaving the jet liquefier, the mixture is cooled and transferred to a holding tank for a retention period of 90–120 minutes at 95–97°C.

 

Next, a second jet treatment is performed. In the second jet liquefier, the mixture again comes into direct contact with steam, raising the temperature to 110–145°C or higher. It is then held in a high-temperature retention tank for about 3–5 minutes to completely deactivate the thermostable α-amylase. During this stage, the starch is further dispersed and proteins are further coagulated under the combined effect of temperature and pressure difference.

 

The material is then rapidly cooled to 95°C through a vacuum flash cooling system and maintained at this temperature. Simultaneously, the pH is adjusted to 4.8–5.0. The first step in purification involves removing solid residues using a filter. Afterwards, spent activated carbon is added for a 30-minute decolorization process, followed by filtration. A second decolorization step is then carried out. After decolorization, the sugar solution undergoes ion exchange.

 

The ion-exchanged sugar solution is concentrated to 50–60% using a five-effect falling film evaporator, followed by spray drying. The final product is then packaged.
